The emotion that Colombo’s food produces is not nostalgia — it is recognition. A city that has been layered by Portuguese, Dutch, British and South Indian influences for five centuries does not offer a cuisine so much as a conversation, and the first spoonful of a well-made lamprais or a roadside kottu tells you more about how this island has absorbed and transformed everything that arrived on its shores than any history book manages.
